
Kadhai Chicken
Kadhai Chicken is a popular Indian dish made with chicken cooked in a spiced, flavorful gravy. The name "Kadhai" refers to the traditional wok-like pan used for cooking. The dish features tender chicken pieces simmered in a mixture of tomatoes, onions, bell peppers, and a blend of aromatic spices such as cumin, coriander, garam masala, and red chili powder. It's often garnished with fresh cilantro and served with naan or rice. The result is a rich, savory, and slightly tangy curry with a thick, robust texture.

Ingredients
- Marination Ingredients
- 1 kg Chicken
- 1 tsp Turmeric Powder tsp
- 1 tsp Red Chili Powder tsp
- 1 tbsp Lemon Juice
- Gravy Base
- 40 ml Sunflower Oil (3-tbsp)
- 1 tbsp Ginger & garlic paste
- ½ tsp Jeera;
- ½ tsp Kalonji
- ½ tsp fennel seeds,
- ½ tsp Ajwain(Carom seeds)
- ½ tsp Whole coriander seeds
- 1 tsp Red chilli powder
- 1 tsp Red crushed Chilli
- 1 tsp Coriander powder
- 1 tsp Turmeric/ Haldi
- 1 tsp Kashmiri Basar
- 1 tsp salt
- 1 tsp Bay & Green Gold Blend
- 1 tsp Black & Bold Spice Mix
- 1 tsp Cinnamon
- 1.5 cups Chopped Tomatoes
- 1 tsp Coriander Powder
- 1 tsp Cumin Powder
- 2-3 tbsp Kadhai Masala
- Spices for sizzling
- 3 pcs Peppers Cut in long slices
- 1 pcs Onions Cut in long slices
- 1 pcs Fresh Tomato Cut in long slices
- Garnishing Ingredients
- 1 tbsp Ginger Julien
- 1 tbsp Green Coriander
- 1 tbsp Chopped Spring onions
Instructions
- PREPARATION
- Flash marinate the chicken pieces with turmeric powder, Red chili powder, lemon juice & some salt.
- Add 20 ml sunflower oil & sear the marinated chicken pieces until golden & set aside.
- In the same pot now add rest of the sunflower oil, heat it & add whole cumin, Kalonji, fennel seeds, Ajwain seeds & sizzle them for a few seconds.
- Add Ginger & garlic paste and the chopped onion & fry very well until the onion becomes translucent & oil begins to leave.
- Add the dry spices, and fry them very well until the raw smell completely disappears & oil begins to ooze out.
- Throw in the fresh tomatoes & yogurt & fry until they become mushy.
- Throw in the seared chicken pieces & give everything a very good mix.
- Add some water and cook it for 8-10 minutes.
- Now add the peppers, onion, & tomatoes and cook for another 5-10 minutes.
- Lower the heat & add lemon juice & give everything a very good mix.
- Garnish with coriander leaves, spring onions, ginger julienne & serve hot. Enjoy!
