Misal Pav is a popular Maharashtrian street food that consists of a spicy curry made with sprouted lentils, topped with crispy sev, chopped onions, and served with pav bread. Here’s a simple recipe to make Misal Pav at home:

Ingredients:
- 1 cup mixed sprouts (moong dal, moth beans, and chana dal)
- 2 tbsp oil
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tsp ginger-garlic paste
- 1 tbsp Misal Masala (a special spice blend used for this dish)
- Salt to taste
- Water as needed
- Coriander leaves for garnishing
- Lemon wedges for serving
- Pav bread for serving
- Sev for garnishing
Instructions:
- To make the sprouts, wash and soak 1 cup of mixed lentils in water overnight. Drain the water and tie the lentils in a muslin cloth for about 8-10 hours until they sprout.
- In a pressure cooker, add the sprouts, salt and enough water to cover the sprouts. Pressure cook for 1-2 whistles until the sprouts are cooked and soft.
- In a pan, heat oil and sauté the onions until they turn golden brown.
- Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they are soft and mushy.
- Add the Misal Masala and cook for a minute.
- Add the cooked sprouts along with the water in which they were cooked. Mix well and let it simmer for 5-10 minutes.
- Adjust the consistency by adding water if necessary. The curry should be of a semi-thick consistency.
- To serve, place some pav bread on a plate, pour the hot misal over it, and top it with some sev and chopped onions. Garnish with coriander leaves and serve with lemon wedges.
